Xanthan gum, also known as Hansheng gum, is a widely effective microbial extracellular polysaccharide produced by the wild Brassica juncea bacterium through fermentation technology using carbohydrates as the main raw material (such as corn starch). It possesses unique rheological properties, good water solubility, stability against heat, acids and bases, and excellent compatibility with various salts. As a thickener, suspending agent, emulsifier and stabilizer, it can be widely applied in 20-plus industries such as food, petroleum and medicine. It is currently the largest-scale microbial polysaccharide produced worldwide and has the most extensive applications.
